Here are some stuffed cookies. I was inspired to cobble together a makeshift Grasshopper as well, and I highly recommend they be consumed together because its delicious. I ended up with three different cookie textures; the first batch of small ones are more gooey than chewy, the large ones are chewy in the middle but crispy around the edges, and the middle sized ones are decently chewy.  Of course, they’re all delicious, so I’ll be sending some of each kind away for approval.  Adam can be the judge of which are best. I do have one more trick up my sleeve though, and I can’t use it until I know exactly which texture we’re going with.  So sorry, but the cookies won’t be officially completed until at least next week.
